Chia Seed Berry Jam

(without sugar and pectin)

Cook Time: 15 mins

Ingredients

  • 2 cups frozen berries [any berries; fresh berries are ok too but may take a bit longer to cook]
  • 1/4 cup chia seeds
  • juice of half lemon

Instructions

  1. Add frozen berries to a small saucepan. Place on medium heat and cover, stirring occasionally for about 14 minutes.
  2. As the berries cook, they will break down. Use a fork to mash into smaller pieces, eventually it will become a thick puree. Remove from heat.
  3. Stir in the chia seeds, mix well to evenly distribute the seeds. Add lemon juice and stir well.
  4. Let stand for at least 15 minutes to gel. Cool and store in the fridge for a few days or freeze*.

My personal note:

This amazing homemade jam would last for about 3 days if stored in fridge; longer if stored in freezer.  I normally keep half of the jam in fridge for immediate use, and the rest in the freezer.
